Zoodles with Lemon Garlic Shrimp

Yummy zucchini noodles with shrimp and grape tomatoes are a great alternative to actual pasta!

Like most people, I absolutely love pasta, however I don't love the calories and carbs that come my favorite Italian food. My new favorite dish that I've been absolutely obsessed with lately is zucchini noodles or "zoodles." This dish is so quick and easy and very satisfying.
If you don't already have a vegetable spiralizer, it is a worthy investment that I highly recommend. Luckily, my roommate has one, but if you don't have one you can purchase one for $14.99 on Amazon (that is the cheapest price I found).

I love shrimp and tomatoes so I decided to add those, but the basis of this dish is so simple that you can basically personalize it by adding any kind of meat or vegetable you want. Below are the ingredients and instructions. I have also included the prices that I paid for each ingredient at local grocery stores near Ohio State campus. Enjoy!
Ingredients
1 zucchini
4 oz (approx 10) raw medium shrimp
1/2 cup grape tomatoes
1 tbsp olive oil
1 tbsp chicken broth
1 tsp lemon juice
1 tsp garlic powder
1 tsp dry parsley
1/2 tsp red pepper flakes
salt and pepper to taste
Instructions
Cut ends of clean zucchini and spiralize. Set aside.
Heat oil and chicken broth in a pan over medium-high heat. Add shrimp and season with garlic powder, salt and pepper. Cook for one minute or until bottom sides are crispy, then flip and cook for another minute.
Add tomatoes, lemon juice and red pepper flakes to the pan and simmer for 1-2 minutes.
Add zucchini and parsley and cook for 1-2 minutes. Serve immediately.

Because I already had the olive oil, chicken broth, lemon juice and spices, it cost me $8.17 to make this meal three times! All of the ingredients purchased from Aldi were cheaper compared to the same items at Kroger.
