Cookin' up dope in the crockpot (pot)

Rice bowl topped with shrimp, over easy egg, avocado and Siracha

So I have two confessions. 1. Every time I use the crockpot I end up singing Bad and Boujee (you can fact check with my roommates on this one). 2. I LOVE meat. I sincerely apologize to the vegetarians and vegans out there. Two of my best friends don't eat meat and I love to whip up some veggies anytime--but nothing beats a nice, tender, juicy piece of meat.

This crockpot pork shoulder, adapted from this recipe, feels like comfort food to me. Although this recipe probably makes more than a single serving, I love it so much that I had to share with you guys.

“Just throw your pork in the crockpot (pot) and return to it in 4-6 hours.”

Seriously, this recipe is so easy. All you have to do is defrost the meat, throw it in the crockpot with some marinade and wait all day (waiting is the hardest part—I'm not a very patient person). The baked asparagus, adapted from this recipe, takes 10 minutes, so you can just whip it up right before the pork is done.

I hope you guys enjoy this meal as much as I did!

Crockpot Pork Shoulder Ingredients

1 (or 2) pork shoulder

1 tsp garlic powder

½ teaspoon red pepper flakes

1/3 cup chicken broth

1/3 cup balsamic vinegar

1 tablespoon Worcestershire sauce

1 tablespoon honey salt and pepper to taste

Baked Asparagus Ingredients

1 lb asparagus

3 tbsp olive oil

1 tsp minced garlic

1/2 cup Panko bread crumbs

3 tbsp shredded parmesan

1 tsp lemon juice

salt and pepper to taste

Crockpot Pork Shoulder Instructions

  • Place pork shoulder in the crockpot. Season with garlic powder, red pepper flakes, salt and pepper.

  • In a separate bowl, mix together chicken broth, balsamic vinegar, Worcestershire sauce and honey. Pour mixture over pork shoulder into the crockpot.

  • Set crockpot to cook for 4 or 6 hours (depending on what time it is and when you want to eat).

  • Once pork is cooked it should be tender and break apart with a fork. Serve warm.

Baked Asparagus Instructions

  • Preheat oven to 425 degrees.

  • Wash and remove tough ends from asparagus.

  • Lay asparagus on a baking sheet. Drizzle with olive oil and lemon juice and sprinkle garlic, bread crumbs, parmesan, salt and pepper. Toss to coat evenly.

  • Roast in the oven for 8-10 minutes.

  • Remove from oven and serve immediately.
