Spinach Berry Salad

Kick off your spring with this sweet and fruity salad!

Spring is in the air and it's FINALLY starting to get warmer out, which is what inspired me to make this recipe. There's just something about the sunshine that makes me more motivated to eat a salad.
This is a great salad to whip up real quick and pack for lunch on the go. It's great on its own, but also pairs well as a side dish.

To be fair, I used balsamic glaze that I purchased at Kroger, rather than making my own. It definitely takes a little longer to make your own balsamic glaze but it's also much cheaper—your call!
I topped my salad with shredded parmesan because that's what I had in the fridge, but feta would also go really well with these ingredients. You can really make this salad as big or small as you'd like and customize it with other kinds of toppings or fruit. If you're looking for a quick spring/summer inspired dish, this one will not disappoint.
Ingredients
flat leaf spinach
1-2 chopped strawberries
handful of blueberries
raw almonds
shredded parmesan/feta
1/2 cup balsamic vinegar or 1 tbsp balsamic glaze
Instructions
To make your own balsamic glaze, heat balsamic vinegar in a small saucepan over medium-high heat until it boils. Reduce heat to medium-low and simmer for 10-15 minutes until reduced by half. Remove from heat and set aside.
Fill a bowl/plate with as much spinach as you want.
Chop strawberries. Add strawberries, blueberries and almonds to the spinach. Sprinkle with parmesan/feta and drizzle balsamic glaze.
Serve immediately or refrigerate for later.
