Fish Tacos

Skip Condado, save $ and make your own yummy tacos instead!

I LOVE tacos, and like pretty much everyone else in Columbus, Condado is my favorite place to get them. However, as much as I love consuming an entire order of queso, 2 tacos and 3 margs, I simply can't take that big of a hit to my wallet and waistline every weekend.


Hands down the best taco I've ever had at Condado was made with tilapia, which they sometimes feature as their protein of the month. Since Condado doesn't have that ingredient all the time and I'm (trying) to decrease how often I go out to eat, I wanted to attempt making my own tilapia tacos at home.

To make the tacos, I used mango pico de gallo from Aldi. You can, of course, make your own pico, but this saved me a lot of time and I love the flavor. Hope you guys love this recipe as much as I do!


Ingredients

1 tilapia fillet

2 flour tortillas

1/2 avocado

1/2 cup mango pico de gallo

1/2 cup iceberg lettuce

1 tbsp olive oil

1/4 tsp cumin

1/2 tsp paprika

1/4 tsp garlic powder

1/4 tsp onion powder

red pepper flakes

salt and pepper to taste


optional: chipotle ranch dressing


Instructions

  • Preheat oven to 400F. Defrost tilapia fillet in the microwave.

  • Combine cumin, paprika, garlic powder, onion powder, red pepper flakes, salt and pepper in a small bowl to create a rub.

  • Cover small baking sheet with olive oil. Once defrosted, place tilapia on baking sheet and cover both sides of the fillet with the rub. Bake tilapia for 10 minutes.

  • While tilapia is cooking, chop lettuce and avocado into small pieces.

  • When tilapia is finished, cut the fillet in half and set each half on top of a tortilla. Cover with pico de gallo, avocado, lettuce and chipotle ranch dressing (or sauce of your choice).

  • Serve immediately.
