Grilled Chicken Caprese

Grilled chicken topped with melted mozzarella, tomatoes, fresh basil and balsamic glaze.

As you've probably figured out by now I am a lover of all things Italian and I actually took three semesters of Italian language classes, so I'm basically an expert. Whenever I eat anything remotely Italian I never hesitate to remind people that I studied abroad, much to the annoyance of my close friends (see hilarious video similar to when I returned from my trip to Rome and London here).
Anyway, I originally found this recipe on Pinterest from Confessions of a Fit Foodie and modified it to serve one. It's a variation of a chicken caprese sandwich and adds amazing fresh flavor to grilled chicken without the extra carbs. The best part is that I made it on my handy dandy George Foreman grill.

Okay the above quote may have been a bit dramatic, but this dish is seriously good. You can actually buy balsamic glaze at Kroger for $5.09, but making it yourself is definitely cheaper, so I included instructions on how to do that as well. Buon Appetito!
Ingredients
1 chicken breast
1/2 cup grape tomatoes
sliced fresh mozzarella
fresh basil
1/2 cup balsamic vinegar
1 tsp garlic powder
salt and pepper to taste
Instructions
To prep, thaw chicken, cut tomatoes into halves and slice mozzarella.
Heat balsamic vinegar in a small saucepan over medium-high heat until it boils. Reduce heat to medium-low and simmer for 10-15 minutes until reduced by half. Remove from heat and set aside.
Place chicken on the grill and season with garlic powder, salt and pepper. Grill chicken for 3-5 minutes, flip and grill for 3-5 minutes.
Place mozzarella and tomatoes on top of chicken and grill for 1-2 minutes or until cheese melts (I usually hold the lid down).
Remove chicken and top with balsamic glaze and basil. Serve immediately.
