Balsamic Roasted Potatoes and Asparagus

I got beans, greens, potatoes, tomatoes... (well, some of those anyway).

Delicious balsamic vinegar brings out the natural sweetness of the veggies in this quick and easy recipe. The best part is, you can customize this recipe by adding other vegetables like carrots or green beans, whatever you happen to have in the pantry!
This recipe is a variation of one that I found on another blog called Wallflower Kitchen. I'm always down to recommend other blogs and be honest about where I find recipes— remember I'm just a student, not a professional food blogger/chef.

I was feeling boujee, so I made this dish to accompany a small ribeye steak that I cooked on my George Foreman grill, however, this dish goes great with chicken, fish, pork or simply solo.
Although this recipe does take a little more time to cook, the prep work is so quick and easy. As long as you set a timer, you can throw these bad boys in the oven and get back to homework/studying for a while before they need any attention. The key is to not overcook the asparagus. It takes a short time to crisp up and will eventually get soggy if left in the oven for too long.
This recipe requires minimal ingredients and I purchased everything I needed from Aldi. This was my first time making this recipe and I loved it. I hope you enjoy it too!
Ingredients
1 lb honey gold potatoes
1 lb asparagus
1 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp garlic powder
salt and pepper to taste
Instructions
Preheat oven to 400F.
Remove tough ends from asparagus and cut remaining asparagus into halves.
Add olive oil, balsamic vinegar, garlic powder and salt to a large pan or roasting tin. Add potatoes and toss to coat fully. Roast 25-30 min.
After the potatoes have roasted, add the asparagus and toss to coat. Cook for another 10-15 minutes or until asparagus is crisp.
Season with salt, pepper and extra balsamic vinegar if needed.
